Biennial plant that forms a rosette of leaves in spring and summer, while developing the thick napiform root, which will store large amounts of sugar for the flowering of the following year. The floral stem grows about 10 cm with an umbel of white flowers at the apex. The edible root is usually orange, white or in a combination of red and white, and even - more rarely - of violet peel with a whitish interior, all these varieties always with a crisp texture when they are fresh.
